Some call it teppanyaki, others hibachi. Either way, this griddle-style loaded fries recipe is seriously addictive.
How to make Blackstone Hibachi Loaded Fries
I used a classic hibachi trio—shrimp, steak, and chicken—because that’s what I usually order at hibachi restaurants. This combination gives the fries a wonderful mix of flavors and textures.
Start by heating your Blackstone or other flat top griddle to medium. Add a little cooking oil, then add diced chicken, diced steak, minced garlic, grated ginger, kosher salt, and pepper.

Cook the meats for a few minutes, stirring occasionally. Next add the diced shrimp and drizzle in your favorite teriyaki sauce, then cook a few more minutes until everything is cooked through and nicely glazed.
While the proteins finish, cook the waffle fries. You can air fry or oven-bake them, or crisp them right on the griddle in a single layer with a bit of oil—flip a few times until they’re golden brown and crispy.


When the fries are crisp, transfer them to a baking sheet and place the sheet on the griddle. Layer the fries with shredded cheese, then top with the hibachi-style steak, chicken, and shrimp. Add another layer of cheese on top and cover with a melting dome or griddle lid until the cheese is fully melted.

Finish with your favorite toppings. I love yum yum sauce, extra teriyaki, a touch of sriracha for heat, sesame seeds, and chopped green onions. These add bright flavor and a nice contrast to the rich, cheesy fries.

Ingredients
- cooking oil of choice
- 8 ounces steak, diced
- 8 ounces chicken, diced
- 4 cloves garlic, minced
- 1 teaspoon grated ginger
- kosher salt and pepper
- 8 ounces shrimp, diced
- teriyaki sauce of choice
- 1 (22-ounce) package frozen waffle fries, thawed
- 1 1/2 to 2 cups shredded cheese (I used quesadilla blend)
- Optional toppings: yum yum sauce, extra teriyaki, sriracha, sesame seeds, green onions
Instructions

Preheat the griddle to medium. Add oil, steak, chicken, garlic, ginger, kosher salt, and pepper. Cook about 3 minutes, stirring a few times.

Add shrimp and teriyaki sauce. Cook 3–4 more minutes, stirring so everything gets coated. Move the proteins to the edge of the griddle or remove temporarily.

Cook fries in the oven, air fryer, or on the griddle in a single layer with oil. Cook about 8 minutes, flipping occasionally, until crispy. Season with salt and pepper if desired.

Transfer fries to a baking sheet and place the sheet on the griddle. Layer with cheese, the hibachi steak, chicken, and shrimp, then more cheese. Cover with a melting dome or lid until cheese melts.

Top with yum yum sauce, extra teriyaki, sriracha, sesame seeds, and green onions as desired. Serve hot.
