Easy and Delicious English Toffee Recipe

Chocolate and toffee are one of my favorite combinations. I grew up loving Skor bars and still get excited whenever toffee is around. During the holidays you start seeing toffee, brittle, peppermint bark and pumpkin-spiced treats everywhere — and homemade toffee is one of the best. This recipe is simple, forgiving, and doesn’t require a candy thermometer. Whether you’re an experienced baker or a newbie, this is a reliably delicious recipe that will quickly become a favorite.

The base is a golden-brown layer of buttery toffee made from just a few inexpensive ingredients. That layer is topped with almonds, a blanket of melted milk chocolate, and a sprinkle of pecans. It’s made in one pan and is perfect for sharing with large groups. As long as you keep the same ratios you can swap the nuts and chocolate to suit your preferences, or leave the nuts out entirely. Homemade toffee has a deep, caramelized flavor that’s hard to resist.

Ingredients for Homemade Toffee

This toffee uses simple pantry ingredients you likely already have. The short ingredient list makes it easy to scale up for gift batches or holiday gatherings. Exact measurements are shown in the recipe card below.

Toffee

  • Butter: Use real butter for richness and proper texture; salted butter works well.
  • Sugar: Granulated sugar gives the classic caramelized color and flavor.
  • Salt: Balances the sweetness and enhances flavor.
  • Vanilla: Pure vanilla extract adds depth and aroma.

Nuts and Topping

  • Almonds and Pecans: A mix of almonds and pecans gives a nice contrast of texture and flavor. You can swap for peanuts, cashews, or omit nuts if desired.
  • Milk Chocolate Chips: Melted on top for a smooth chocolate layer. Dark or white chocolate also work well.

How to Make Toffee at Home

Making homemade toffee is straightforward. Follow these steps for a consistently delicious result.

  1. Toast the almonds: Measure and prepare all ingredients. Place the almonds on a plate and microwave on HIGH for 2–3 minutes to lightly toast them.
  2. Prepare the pan: Line a 9×13-inch baking sheet with foil. Spread the toasted almonds in a single layer on the foil.
  3. Melt the toffee base: In a large, heavy-bottomed saucepan, combine the sugar, cubed butter, vanilla, and salt. Melt over medium heat, stirring constantly.
  4. Cook to golden brown: Once melted, gradually increase heat to medium-high and continue stirring. Cook for about 10–15 minutes, stirring frequently, until the mixture turns a deep golden-brown color. Work quickly once it reaches the right color and pour the hot toffee evenly over the almonds in the prepared pan.
  5. Add chocolate: Let the toffee sit 2–3 minutes, then sprinkle the chocolate chips over the top. Let them sit a couple more minutes to soften, then spread the melted chocolate into an even layer. Sprinkle with finely chopped pecans and allow to cool completely. Refrigerating briefly will speed this up.
  6. Break and store: When fully cooled and set, break the toffee into pieces with a butter knife. Store in an airtight container at room temperature.

Tips for Making Successful Homemade Toffee

These tips help ensure your toffee sets properly and tastes fantastic every time.

  • Use real butter: Margarine and other substitutes contain too much water and prevent the toffee from hardening properly.
  • Avoid humid days: High humidity can prevent toffee from setting and make it chewy. Cooler, drier weather is ideal.
  • Keep heat steady: While a candy thermometer isn’t required, maintain even heat and avoid sudden temperature changes to get uniform texture.
  • Customize flavors: Drizzle salted caramel over the chocolate, swap nuts or chocolate types, or add spices like cinnamon or nutmeg to the chocolate for a seasonal twist.

Storing Leftover Toffee

Proper storage keeps homemade toffee fresh and gift-ready.

  • Room temperature: Keep pieces in sealed bags or an airtight container away from heat. Stored this way, toffee stays good for up to two weeks.
