Ingredients

  • 2 cups all-purpose flour
  • Ÿ cup granulated sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon kosher salt
  • œ cup pistachios, shelled and lightly chopped
  • œ cup dried cranberries
  • Zest of a large orange
  • œ teaspoon orange extract or almond extract
  • 2 large eggs
  • 4 tablespoons butter, salted or unsalted
  • Coarse sprinkling sugar, optional

Instructions

  1. Preheat the oven to 350°F. Lightly grease or line a baking sheet with parchment paper.
  2. Melt the butter and let it cool slightly.
  3. In a large bowl, mix the flour, sugar, baking powder, salt, pistachios, dried cranberries and orange zest.
  4. In a small bowl, whisk the eggs, cooled melted butter and extract.
  5. Stir the wet ingredients into the dry until just combined.
  6. Turn the dough onto a lightly floured surface and knead briefly. Divide into two logs.
  7. Place logs on the prepared sheet and shape into rectangles about 4 inches wide by 8 inches long and 1 inch thick. Leave space between pieces and sprinkle coarse sugar if using.
  8. Bake about 25 minutes or until edges are lightly golden.
  9. Remove from oven and lower temperature to 300°F.
  10. Cool loaves 5–8 minutes, then transfer to a cutting board.
  11. Slice loaves into roughly 1-inch thick pieces with a sharp knife.
  12. Arrange slices cut-side down on the baking sheet and bake about 12–15 minutes, flip, then bake another 12–15 minutes until crisp.
  13. Cool completely. Store in an airtight container or freeze for up to three months.

Notes

  • Use roasted, lightly chopped pistachios to add texture without large chunks.
  • Slice loaves diagonally for angled biscotti or straight across for classic slices.
  • Let loaves cool 5–10 minutes after the first bake for easier slicing.
