Swede (British) is known by several names: rutabaga in the United States, neep in Scotland, and sometimes called a Swedish turnip in parts of Europe. It is different from the white turnip and has a firmer, slightly sweeter flesh that makes it an excellent low-carb alternative to potato or cauliflower mash.
If you want a change from cauliflower-based sides, swede is a satisfying option. It works particularly well with protein-focused main dishes and fits clean keto and low-carb diets. The texture is more potato-like than cauliflower, and when well cooked and puréed it becomes silky and rich.
Prepping a swede is straightforward: slice off the top and bottom, peel the outer skin and any green areas, then cut into even cubes. Smaller swedes tend to have better flavour. Choose a swede with a uniform dark colour — this indicates ripeness. When cut into small pieces, boiling will take about 25–30 minutes until the pieces are completely tender.
How to Make Keto Swede Purée
Cook the swede until very soft so it purées smoothly. Compared with cauliflower or broccoli, swede needs a little longer to reach a melting texture, but otherwise the method is simple and forgiving.

Adding a little crème fraîche brings fat and richness and makes the purée luxuriously creamy. If crème fraîche is not available, full-fat sour cream is an acceptable substitute; the result will still be creamy but slightly tangier. A knob of butter and a small amount of hard cheese such as Parmigiano Reggiano round out the texture and deepen the flavour.
Parmigiano Reggiano is a hard, aged cheese that adds a nutty umami note when grated into the purée. A small amount goes a long way: it enhances depth and salinity without masking the natural flavour of the swede. Grana-style cheeses with similar ageing can be used if Parmigiano is not available, but the intensity may vary.

Ingredients
- 450 g swede (about 1 small swede, 375 g net)
- 1 TBSP fine salt
- 10 g butter
- 10 g Parmigiano Reggiano, finely grated
- 25 g crème fraîche or full-fat sour cream
Instructions
- Peel the swede, trim the top and bottom, and cut into small even cubes. Place the cubes into a pot large enough to hold them in a single layer with a little room to spare.
- Add enough water to cover the swede cubes completely, then bring the pot to a rapid boil over high heat. When boiling, add the salt, reduce the heat to maintain a rolling simmer, cover, and cook for 25–30 minutes. The swede is ready when the largest pieces are soft enough for a fork to pass through easily.
- Drain the cooked swede thoroughly. Return the drained swede to the pot or transfer to a mixing bowl and purée using an immersion (stick) blender, food processor, or potato ricer until smooth. For a coarser texture, mash by hand.
- Stir in the butter, grated Parmigiano and crème fraîche (or sour cream) until fully incorporated and the purée is silky. Taste and adjust seasoning with more salt if needed. If the purée feels too thick, add a tablespoon of the cooking water or a teaspoon of cream to reach the desired consistency.
- Serve immediately while warm as a side to your chosen main, or keep covered in a warm place for up to 30 minutes. Reheat gently if needed, adding a small splash of cream or butter to revive the texture.
Notes
For the smoothest result use an immersion blender or food processor. If you prefer a lighter texture, substitute half the crème fraîche with a splash of double cream. Swede stores well in the refrigerator for 2–3 days once puréed; reheat gently to preserve the texture.
