Tender Oven-Baked Ribs with Sticky BBQ Glaze

My Baked Ribs recipe is pure comfort on a plate. Tender racks of pork ribs are rubbed with a bold spice blend, slow-baked until the meat is fall-off-the-bone tender, and finished with a caramelized layer of savory BBQ sauce. This oven method delivers backyard barbecue flavor without a grill, perfect for weeknight dinners or weekend feasts.

Baked Ribs

These baked ribs combine smoky, savory, and slightly sweet flavors in every bite. Using baby back pork ribs keeps the texture tender and relatively quick to cook compared to larger cuts. If you prefer, spare ribs work well too and offer a bit more fat and deeper flavor. The recipe is flexible: swap seasonings or BBQ sauce to suit your taste.

  • Smoked paprika – substitute regular paprika if preferred
  • Black pepper
  • Chili powder
  • Cayenne pepper – optional for heat
  • Olive oil – or avocado, canola, or vegetable oil
  • BBQ sauce – hickory or brown sugar flavors work well

Preparing ribs

Instructions:

1. Preheat and prepare. Preheat your oven to 350°F (175°C). Line a 9×13 baking sheet with parchment paper or foil for easier cleanup.

2. Remove the silverskin. Flip the ribs bone-side up. Use a small paring knife to loosen the silverskin membrane on the underside, then grab it with a paper towel and peel it off completely. Removing the membrane helps seasonings penetrate and improves tenderness.

3. Make and apply the spice rub. In a small bowl, combine garlic salt, onion powder, smoked paprika, black pepper, chili powder, and cayenne. Sprinkle the mixture evenly over both sides of the ribs. Drizzle with olive oil and rub the seasoning into the meat to coat thoroughly.

Cover with foil and bake

4. Slow-bake covered. Place the seasoned ribs meat-side down on the prepared baking sheet. Cover tightly with aluminum foil and bake at 350°F for about 2 hours. Baking covered traps steam and gently breaks down connective tissue for tender ribs.

5. Prepare the BBQ sauce. While the ribs bake, mix the BBQ sauce with minced roasted garlic, Worcestershire sauce, honey, and red pepper flakes. Taste and adjust sweetness or heat to your preference. This sauce will glaze and caramelize on the ribs.

6. Finish at higher heat. Remove the foil and increase the oven temperature to 450°F (230°C). Brush the ribs generously with the prepared BBQ sauce and return them to the oven, uncovered, for about 10 minutes to set the glaze.

7. Optional broil for caramelization. For a slightly charred finish, set the oven to broil on medium-high and broil the ribs for 3–5 minutes. Watch closely to prevent burning; this step intensifies caramelization and adds a touch of char.

Rest and serve

8. Rest and serve. Remove the ribs from the oven and let them rest for 10 minutes before slicing between the bones. Resting helps the juices redistribute so each bite stays moist. Serve warm with extra BBQ sauce on the side and your favorite sides.

Storage

Allow leftover ribs to cool completely, then store in an airtight container or resealable bag in the refrigerator. Properly stored, they will keep for 3–4 days. Reheat gently to preserve moisture (see reheating tips below).

Freezer and Make-Ahead

Can I make this ahead and freeze it? Yes. Cook the ribs as directed and allow them to cool completely. Slice into individual portions or leave whole if preferred, then place into airtight freezer bags or containers. Label with the date and freeze for up to 3 months. Thaw completely in the refrigerator before reheating.

Reheating Tips

Oven: Place ribs on a foil-lined baking sheet, cover with foil, and heat at 350°F (175°C) for 15–20 minutes or until warmed through. For a glaze finish, uncover and brush with sauce for the last 5–8 minutes.

Microwave: For quick reheating, place ribs on a microwave-safe plate, cover loosely, and heat on 50% power for 3–4 minutes, checking and rotating as needed to avoid overcooking.

Notes

Storage: Refrigerate cooled leftovers in an airtight container for 3–4 days.

Reheating: Reheat in a 350°F oven covered with foil for 15–20 minutes, or microwave on 50% power until heated through.

Freeze: After cooking and cooling, freeze sliced ribs in labeled bags for up to 3 months; thaw completely before reheating.

Rib types: Baby back ribs are smaller and tender; spare ribs are larger and fattier. Both work well with this method.
