These are the best strawberry cheesecake cookies—soft, thick, gooey, and perfectly sweet. Each cookie combines bright fresh strawberries with a creamy vanilla cheesecake center for a bakery-style treat that’s decadent enough for special occasions. Options for gluten-free and dairy-free versions are included in the recipe.

Fruit-forward desserts are some of my favorites, and these cookies sit alongside other seasonal treats like dairy-free berry ice cream bars, lemon blueberry pop tarts, and simple strawberry vanilla popsicles. They bring fresh strawberry flavor together with a silky cream cheese filling for a cookie that tastes like cheesecake in every bite.
Recipe highlights:
- Flavor and texture: Soft, thick, chewy and slightly gooey, these cookies blend strawberry and vanilla cheesecake flavors for a rich, satisfying taste.
- Bakery-style finish: They have a professional look and taste—great for holidays and gatherings such as Easter, Mother’s Day, or Father’s Day.
- Dietary options: Easily made gluten-free or dairy-free by swapping the flour and cream cheese/butter as noted below.
Ingredient notes:
Exact amounts are listed in the recipe card below. Use the notes here as a guide for choosing ingredients that give the best results.

- Strawberries: Fresh strawberries are recommended. Frozen berries release too much moisture and can discolor the dough.
- Cream cheese: Use plain, unflavored cream cheese for the filling. For dairy-free cookies use a vegan cream cheese alternative.
- Butter: Unsalted butter at room temperature gives the cookies a tender, shortbread-like texture. Swap for vegan butter for a dairy-free version.
- Sugar: Granulated cane sugar provides the ideal sweetness and structure for both the dough and the filling.
- Honey or maple syrup: Adds moisture and a mellow sweetness. Either works; maple syrup is a good vegan swap for honey.
- Eggs: Give the dough lift and structure. I have not tested egg replacements in this recipe.
Recipe variations and add-ins:
- Dairy-free: Use vegan cream cheese and vegan butter.
- Gluten-free: Use a quality gluten-free all-purpose flour blend cup-for-cup.
- Other berries: Blueberries, raspberries, or blackberries can be used instead of strawberries for a different berry twist.
How to make strawberry cheesecake cookies:
To make the cream cheese filling:

Step 1: In a bowl, beat the cream cheese with the sugar and vanilla until smooth. A hand mixer, stand mixer, or whisk will work depending on how soft the cream cheese is.

Step 2: Scoop 10 heaping tablespoons of the cream cheese mixture onto a parchment-lined baking sheet. Freeze for at least 1 hour, or until solid.
To make the cookies:

Step 1: Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper. In a bowl whisk together the flour, baking soda, and salt; set aside.

Step 2: In a mixer, beat the softened butter with the cane sugar, honey (or maple syrup), vanilla, and eggs until smooth and creamy.

Step 3: Add the flour mixture to the wet ingredients and mix until just combined—do not overmix.

Step 4: Gently fold in the chopped fresh strawberries. Avoid overworking the dough so the berries don’t break down and bleed. Chill the dough in the refrigerator for about 30 minutes to firm up.

Step 5: Use a large cookie scoop to portion the dough into tall mounds on the prepared baking sheets, leaving at least 3 inches between each cookie to allow for spreading.

Step 6: Press an indent into the top of half the dough mounds. Remove the frozen cream cheese pieces from the freezer and place one into each indent. Cover with a small additional scoop of dough and pinch the edges to seal the cream cheese inside, forming tall cookie balls.

Step 7: Bake for 12–14 minutes, or until the edges are golden brown. The centers will still look slightly underbaked—that’s normal and keeps the filling soft and gooey.

Step 8: Allow cookies to cool on the baking sheet so they set slightly, then transfer to a wire rack and enjoy.
Top tips:
- Use room-temperature eggs for even mixing and better rise.
- Soften cream cheese for the filling by letting it sit at room temperature for about 30 minutes to ensure a smooth texture.
- Chill the dough before scooping to prevent excessive spreading during baking.
- Use room-temperature butter rather than melted butter for the right cookie structure.
- Space cookies well: leave at least 3 inches between cookies on the sheet so they bake evenly.
- Don’t overbake: remove when the edges are golden but the centers still look slightly soft for a gooey center.
- Storage: Because of the cream cheese filling, store these cookies in an airtight container in the refrigerator for up to 5 days. They also freeze well in an airtight container for up to 3 months.
