Rice Krispies treats are a classic party staple because they’re simple, no-bake, and endlessly adaptable. I’ve made seasonal versions like red velvet, pumpkin spice, and gingerbread, and this year I added a delightfully creepy brain variation to the lineup.

These treats are ideal for holiday gatherings because they don’t require oven time, freeing up space for other dishes while still making a dramatic statement on the dessert table.
INGREDIENTS
You’ll be happy to know the ingredient list is very short and straightforward.
Start with 5 cups of Rice Krispies or any crispy rice cereal—you can use your preferred brand.
You’ll also need 1/4 cup unsalted butter, a 10-ounce bag of mini marshmallows, and red food coloring to tint the mixture.
That’s all—simple ingredients, big impact.
HOW TO MAKE RICE KRISPIES BRAINS
No special molds required. A saucepan, some gentle shaping, and a little creativity are all you need to form brain-shaped treats.
Melt the butter in a large saucepan over low heat.
Add the mini marshmallows and stir until fully melted. Remove from heat and stir in red food coloring to achieve a pinkish hue—remember the color will lighten when the cereal is added. About 6–8 drops worked well for a soft pink in my batch.

Once the marshmallow mixture is tinted, fold in the Rice Krispies until evenly coated.

Line a baking sheet with parchment or a silicone mat. Lightly oil a 1/4 cup measure or an ice cream scoop to prevent sticking, then scoop portions onto the prepared sheet.
SHAPE THE BRAINS
Use your hands to shape each mound into an oblong circle. Don’t worry about perfection—organic, slightly irregular shapes look more realistic.

Press an indentation along the top of each mound using the handle of a butter knife to create the central groove that separates the two brain hemispheres. Use the flat side of the knife and your fingers to refine the shape and bring the halves slightly closer together.

This doesn’t need to be perfect—remember these are edible props. Embrace irregularities for a more convincing look.
ADD FAKE BLOOD
Adding red “blood” is optional, but it heightens the effect. Use a little food coloring and a small brush to paint streaks on the surface for dramatic flair.

Add a few drops of red food coloring to a small bowl and use a clean paintbrush to apply thin streaks or drips across the grains. Let the treats cool and set completely before serving.

These brain-shaped Rice Krispies treats are quick, crowd-pleasing, and add a playful creepiness to any Halloween table. They store well in an airtight container for up to a week.

- 1 10-oz bag (283g) mini marshmallows about 8 cups
- red food coloring
Instructions
-
Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
-
Measure 5 cups Rice Krispies into a large bowl and set aside.
-
In a large saucepan, melt 1/4 cup unsalted butter over low heat. Add the mini marshmallows and stir until they are completely melted. Remove from heat and stir in red food coloring until you reach the shade you want, remembering the mixture will look lighter when combined with the cereal.
-
Pour the marshmallow mixture over the Rice Krispies and stir until well-coated.
-
Spray a 1/4 cup measure or ice cream scoop with non-stick spray. Gently press a portion of the mixture into the scoop, release onto the prepared baking sheet, and shape each portion into a slightly oblong circle.
-
Use the handle of a butter knife to create an indentation along the top of each mound to form the central groove, then refine the shape with the flat side of the knife and your fingers.
-
If desired, add a few drops of red food coloring to a small bowl and use a clean paintbrush to paint streaks of “blood” on the treats. Allow to cool and set completely before serving. Store in an airtight container for up to one week.
Notes
- Food coloring: Gel food coloring gives a more vibrant, concentrated color.
- Brain size: Make these any size you like—use a larger scoop to create a single giant brain or smaller portions for bite-sized treats.
