Fresh Citrus
Fresh citrus is key to a bright, balanced virgin margarita. If fresh fruit isn’t available, bottled juices can be used, but the flavor won’t be as vibrant.
Expect each lime to yield about 2 tablespoons of juice; an orange provides roughly 4–5 tablespoons.

Liquid Cane Sugar
Liquid cane sugar (such as Sugar in the Raw liquid cane sugar) prevents gritty texture in the finished drink. If you can’t find a commercial liquid cane sugar, you can use simple syrup or make your own.
To make simple syrup: heat equal parts granulated sugar and water, stirring until dissolved. Cool completely and refrigerate leftovers. Note that simple syrup is typically clear, while commercial liquid cane sugar may be darker with a molasses note.

This virgin margarita is light and citrus-forward. The syrup gives it a lovely golden color and smooth sweetness.
Ingredients
- 2 Limes, juice only (about 4 tablespoons)
- 1 Orange, juice only (about 4–5 tablespoons)
- 2 tablespoons liquid cane sugar (Sugar in the Raw or similar)
- 2 tablespoons Rose’s Sweetened Lime Juice
- 2/3 cup Club Soda
- 1/2 cup Ice
- Medium coarse salt (for rim)
- Lime or orange slices for garnish
Instructions
- In a large jar or measuring cup (about 1 quart), combine the lime juice, orange juice, liquid cane sugar, Rose’s sweetened lime juice, club soda and ice.
- Stir gently with a long-handled spoon until the sugar is incorporated and the drink is chilled.
- Pour a few teaspoons of salt onto a small plate. Rub a lime wedge around the rims of two glasses, then dip the rims into the salt to coat.
- Strain the mocktail through a fine-mesh strainer or cheesecloth into the salted glasses to remove pulp and ice shards.
- Add extra ice to the glasses if desired and garnish with lime or orange slices. Serve immediately.
Notes
If liquid cane sugar isn’t available, you can substitute honey, corn syrup or simple syrup. See the earlier section for a simple syrup method.
