A shortened work and school week for our family because of the Columbus Day holiday — a perfect excuse to bring out heartier, more comforting dinner recipes as the weather cools. This week’s menu focuses on easy, family-friendly meals that come together without stress and offer a blend of cozy flavors, nutritious choices, and a couple of favorites everyone asks for again and again.

Meatless Monday: Lentil and Brown Rice Tacos. These tacos are simple to make, budget friendly, and a satisfying alternative to traditional ground beef tacos. Lentils and brown rice combine for a hearty texture, and you can dress them up with your favorite taco toppings — shredded lettuce, diced tomatoes, avocado, salsa, and a squeeze of lime. They reheat well, freeze nicely, and are a great way to incorporate more plant-based meals into the week.
I set aside Monday as our meatless night because it’s an easy way to save on grocery costs and it’s better for the environment. My husband, who prefers meat and potatoes, usually goes along with it — especially if there’s a special dessert to look forward to.

Tuesday: Easy Chicken Pot Pie. This is a classic comfort-dinner that’s perfect for cooler evenings. It’s rich, filling, and full of tender chicken and vegetables in a creamy sauce with a golden crust. If you’re short on time, use store-bought pastry or prepare the filling ahead and assemble when you get home. Serve with a simple green salad or steamed vegetables to balance the richness.

Wednesday: Asian BBQ Turkey Lettuce Wraps. A quick, flavorful meal to break up the week. The turkey mixture is easy to prepare in advance — I like to make it during nap time and keep it warm in the slow cooker so dinner comes together in minutes. Serve with crisp lettuce leaves, shredded carrots, cucumber slices, and a drizzle of sauce for a light but satisfying dinner. These wraps are great for picky eaters because everyone can customize their own.
Thursday: Cheesy Chicken Orzo. A creamy, cheesy one-pot dinner that usually disappears fast, even when doubled for our family of five. Orzo cooks quickly and soaks up flavor, making this a terrific choice for busy weeknights. Add spinach or peas for a vegetable boost, or top with a sprinkle of fresh herbs for brightness.

Friday: Pizza. Nothing beats a homemade pie with the Perfect Pizza Crust. Keep pizza night flexible by keeping dough or crust ingredients on hand — it’s an easy last-minute meal and fun to customize with different toppings. For a lighter option, try a vegetable-packed pizza or whole-wheat crust. Leftovers make great quick lunches the next day.
Tips and variations for the week: rotate proteins or swap in seasonal vegetables, prepare components in advance to save time, and double recipes when you know you’ll be short on time later in the week. Most of these meals reheat well and many can be adapted to dietary preferences without losing their flavor.
