  2. Add the remaining ingredients (split peas, vegetable stock, garlic, thyme, bay leaf, salt and pepper). Close the lid and cook on high pressure for 15 minutes. Allow a natural or quick release according to your preference, then remove the bay leaf and adjust seasoning to taste.

  • 1 onion – finely diced
  • 2 ribs celery – finely diced
  • 2 carrots – finely diced
  • 3 cloves garlic – minced
  • 1 Tablespoon fresh thyme
  • 1 bay leaf
  • 8 cups vegetable stock
  • 2 cups split peas (or soup mix of green & yellow peas and red lentils)

Instructions

  1. Set the Instant Pot to sauté.
  2. Add a splash of olive oil and heat for about a minute. Add the diced onion, celery and carrots, season with salt and pepper, and sauté for 3–5 minutes until softened.
  3. Add the split peas, vegetable stock, garlic, thyme and bay leaf. Secure the lid and cook on high pressure for 15 minutes. Release pressure, remove the bay leaf, taste and adjust seasoning. If desired, blend a portion for a creamier texture or leave chunky.
