Ingredients
- 24 oz (about 1 ½ lbs) small new potatoes, any variety or mix, scrubbed clean but not peeled
- 3 tablespoons extra virgin olive oil, plus 1–2 tablespoons for drizzling
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- Âľ teaspoon salt
- 2 tablespoons fresh parsley, chopped
Instructions
- Fill a large saucepan about three-quarters full with water and add 1 tablespoon of salt. Bring to a boil over high heat. Add the potatoes and cook until they are about 75% done, roughly 10 minutes—fork tender but still slightly firm. Drain in a colander.
- Preheat the oven to 450°F (230°C).
- Place the potatoes in a large bowl. Pour 3 tablespoons of olive oil over them and toss to coat. Spread the potatoes on a baking sheet and gently smash each one with a potato masher, fork, or the back of a spoon so they flatten slightly.
- Mix the garlic powder, thyme, pepper, and salt in a small bowl, then sprinkle the seasoning evenly over the potatoes. Roast for 15–20 minutes, until the centers are tender and the edges have some golden, crispy spots.
- Transfer the potatoes to a serving platter, drizzle with about 1 tablespoon of olive oil, sprinkle with chopped parsley, and serve warm.
