A homemade buttermilk ranch dressing brightened with roasted Hatch green chiles — great on salads or as a dip.

I love working with Hatch green chiles and each season I try to put them into something new. Recently I’ve been making homemade buttermilk ranch weekly, and blending in roasted Hatch chiles gives the dressing a smoky, slightly spicy lift.
This Hatch Green Chile Ranch is perfect on a Southwest-style salad, drizzled over tacos, or served as a dip for tortilla chips and crisp vegetables. It’s simple to make and stores well for a couple of days in the refrigerator.
Ingredients
- Mayonnaise — Use a good-quality mayonnaise for the best flavor.
- Buttermilk — Keeps the dressing tangy and creamy; I don’t recommend substituting.
- Spices — Salt, pepper, garlic powder, onion powder, and dried parsley.
- Hatch green chile peppers — About 1–2 roasted Hatch chiles (roughly 1/4 cup), seeds removed and skins peeled.

How to Make
- Roast the Hatch chiles under the broiler or over an open flame until the skin blisters. Let cool, then remove stems, peel the skin, and discard seeds if you prefer milder heat.
- Place the mayonnaise, buttermilk, roasted chiles, and spices in a blender or food processor. Pulse 4–5 times, or blend until you reach your desired consistency.

Storage and Serving
Transfer the dressing to an airtight container and refrigerate. I like using a mason jar. It’s best consumed within two days for peak freshness and flavor.
Serve as a salad dressing, a dip for vegetables, or alongside tortilla chips. It also makes a tasty sauce for grilled meats or tacos.
