A few months ago my family visited my grandparents in California. It had been too long since our last visit, and I was eager to spend time with them. This is the same grandmother who contributes many of the delicious recipes featured on this blog, using a treasured cookbook she compiled when she first married.
While we were there she made these bars for dessert, and I could not stop eating them. Between pregnancy cravings and a serious sweet tooth, they were impossible to resist. I asked her for the recipe and she smiled, saying it had been in her cookbook all along—I had simply overlooked it. They are incredibly simple to make and strike the perfect balance of ooey-gooey and buttery sweetness. If you like easy, melt-in-your-mouth desserts, these are a must-try.

Ooey Gooey Cake Mix Bars

Ingredients
Crust
- 1 box yellow cake mix dry
- 8 Tablespoons butter melted
- 1 egg
Gooey Layer
- 8 ounces cream cheese softened
- 2 eggs beaten
- 16 ounces powdered sugar
Instructions

Preheat oven to 350°F (175°C).

In a medium bowl combine the dry cake mix, melted butter, and egg. Stir until smooth and fully combined.

Press the dough evenly into the bottom of a greased 9×13-inch baking pan. Set aside.

In a separate large bowl, beat the softened cream cheese until smooth. Add the eggs and beat another minute or two until combined. Gradually add the powdered sugar and continue beating until the mixture is smooth and creamy.

Pour the cream cheese filling over the prepared crust and bake at 350°F for 25–30 minutes, or until the center is set. Be careful not to overbake—these should remain moist and gooey.

Remove from the oven and let cool completely before slicing into bars.
