- 1/2 cup coconut flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 teaspoons arrowroot starch (or cornstarch as an untested substitute)
- 1/2 cup unsweetened cocoa powder
- Zest of 1 orange
- WET INGREDIENTS:
- 1 cup beet puree**
- 1 egg, room temperature
- 1/4 cup coconut oil, melted
- 1/4 cup + 1 tablespoon unsweetened almond milk (or other dairy-free milk)
- 1 teaspoon pure vanilla extract (omit if using vanilla-flavored milk)
- 1/4 cup + 2 tablespoons coconut sugar
- 1/2 cup dark chocolate chips (use dairy-free chips to keep recipe dairy-free)
- CHOCOLATE FROSTING:
- 1 batch of 5 Minute Vegan Chocolate Frosting (make fresh and fold in the orange zest when ready)
- Zest of 1 orange for the frosting
Instructions
- Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
- Defrost or cook the beets: If using frozen beets, defrost according to package directions and allow to cool. If using fresh beets, scrub them, wrap in foil, and roast at 400°F for 45–60 minutes until fork tender; cool, peel, and roughly chop before pureeing.*
- Combine dry ingredients: In a large bowl whisk together oat flour, coconut flour, baking soda, cinnamon, salt, arrowroot starch, and cocoa powder. Stir in the orange zest and set aside.
- Puree beets and mix wet ingredients: Puree the defrosted or cooked beets in a blender with about 1/4 cup water until smooth. Measure 1 cup of puree and reserve any extra for smoothies or other uses. Return 1 cup of beet puree to the blender and add the egg, melted coconut oil, almond milk, vanilla, and coconut sugar. Blend on low until fully combined.
- Bring batter together: Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined. Fold in the dark chocolate chips.
- Portion the batter: Use a large cookie scoop or a 1/4 cup measure to divide batter evenly among the 12 muffin cups.
- Bake: Bake for 15–20 minutes, or until a toothpick inserted into the center comes out mostly clean. Allow cupcakes to cool in the pan for about 20 minutes, then transfer to a cooling rack to cool completely.
- Make frosting and finish: Prepare the vegan chocolate frosting just before frosting. Stir in the orange zest, then spread the frosting on cooled cupcakes. Store at room temperature for 4–5 days or refrigerate for longer keeping.

*Frozen beets are convenient and save time; if using fresh beets, roast as directed until tender, then cool and peel before pureeing. Fresh-roasted beets yield the same moist texture.
**If you prefer not to use beets, you may substitute 1 cup of another fruit or vegetable puree such as applesauce, pumpkin puree, or sweet potato puree. Texture and flavor will vary slightly with different purees.
