The easiest chocolate cupcakes

This chocolate cupcake recipe is one of my favorites because it’s simple and reliable. It works equally well baked as a layer cake or as cupcakes, and it’s designed to be quick to prepare without extra gadgets.

  • No mixer required. You only need two bowls and a spoon or spatula to make the batter, which keeps cleanup minimal while still yielding a light, even crumb.
  • Rich chocolate flavor. The recipe uses natural unsweetened cocoa powder to create a deep chocolate taste. Adding hot coffee to the batter amplifies that chocolate flavor without making the cupcakes taste like coffee.
  • Simple, unfussy cupcakes. These are not filled or layered; instead, the focus is on a tender chocolate cake and a flavorful raspberry buttercream. That simplicity keeps the process speedy while letting both flavors shine.

Delicious Raspberry Buttercream

The buttercream combines a classic American buttercream base with two concentrated raspberry elements for depth and color. Start with softened butter and powdered sugar to build a silky frosting. Then fold in seedless raspberry preserves to add natural fruit flavor and a pale pink hue without dealing with seeds.

Finally, stir in crushed freeze-dried raspberries. These bring a vivid color and an intense raspberry note that won’t water down the frosting. The result is a fresh-tasting, balanced buttercream that pairs beautifully with chocolate.

Chocolate and raspberry are a classic pairing for good reason: the bright tartness of the fruit cuts through the richness of the chocolate, creating an irresistible combination.

Tips for the best chocolate cupcakes

  • Avoid overmixing. Combine the wet and dry ingredients just until the flour is incorporated. Overmixing can develop too much gluten and make the texture heavy instead of tender and light.
  • Don’t overfill the liners. Fill each cupcake liner about two-thirds full. That level gives a slight dome without spilling over the edges, and leaves a pretty surface for piping or spreading the raspberry buttercream.
  • Use natural cocoa powder. Choose natural unsweetened cocoa powder (not dutch-processed) for the intended flavor and chemistry in this recipe. Natural cocoa gives a bright, classic chocolate taste that works well with the coffee enhancement.

FAQs

Does the caffeine in the hot coffee bake out of the cupcakes?

Caffeine does not fully bake out the way alcohol can, but the amount of coffee used per cupcake is small—about half an ounce—so the caffeine per serving is minimal.

Can you taste the coffee in the cupcakes?

The coffee enhances the chocolate flavor and should not leave a noticeable coffee taste. It simply deepens the chocolate notes.

What can I substitute for the hot coffee?

If you prefer to avoid caffeine, substitute hot water for the coffee. The batter will still be thin and the cupcakes will bake up tender with good chocolate flavor.

How do you store the cupcakes?

Frosted cupcakes can sit at room temperature for a few hours, but the buttercream will soften. For longer storage, keep them refrigerated in an airtight container or a covered cupcake carrier. Unfrosted cupcakes can be stored at room temperature for a day or refrigerated for longer.

How long do the cupcakes last?

Properly refrigerated and tightly covered, the cupcakes will stay good for 2–3 days before the cake begins to dry out.

How do you serve the cupcakes?

If refrigerated, bring cupcakes to room temperature for about 30 minutes before serving so the buttercream softens and the flavors open up.
