Ingredients

1 onion
3 cups carrots (peeled and chopped)
3 apples, peeled and sliced
2 tbsp butter (or plant-based alternative)
Grated fresh ginger to taste (about 1–2 tsp to start)
4 cups chicken or vegetable broth
Salt and pepper to taste

Instructions

  1. In a medium pot, combine the chopped onion, carrots, sliced apples and the butter. Place the pot over medium heat.
  2. Cook for about 5 minutes, stirring occasionally, until the onion begins to soften and the carrots start to release some moisture.
  3. Add the grated ginger and continue to cook, stirring, for another 5 minutes so the ginger becomes fragrant and blends with the vegetables.
  4. Pour in the broth and bring the mixture to a gentle simmer. Reduce the heat to low or medium-low, cover the pot, and cook for 50 minutes, or until the carrots are very tender.
  5. Carefully transfer the cooked mixture to a blender in batches, or use an immersion blender in the pot, and blend until smooth and silky. If the soup is too thick, add a little extra warm broth or water to reach your desired consistency.
  6. Taste and season with salt and pepper. Reheat briefly if needed, then serve.
