Savory Smothered Pork Chops with Caramelized Onions

smothered pork chops, parsley, in a black skillet.

This smothered pork chops recipe is one of my most requested dishes. It’s perfect for chilly evenings — a plate of tender pork chops smothered in a rich, creamy sauce served over creamy mashed potatoes is comfort food at its best.

What makes this dish so appealing is how simple it is to prepare without sacrificing flavor. The pork chops are seasoned, lightly coated in flour, pan-fried, and finished in a silky pan sauce made with shallot, garlic, a splash of wine, chicken stock and cream. The result is moist, flavorful pork chops with a sauce that’s perfect for spooning over rice or potatoes.

You can use boneless or bone-in pork chops depending on your preference. Both work well with this method.

What are smothered pork chops?

Smothered pork chops are seasoned and floured pork chops that are pan-fried and then simmered in a pan sauce until tender. This Southern-style technique creates a comforting, savory dish with a luscious sauce that clings to the meat.

Ingredients you’ll need for smothered pork chops:

  • Pork chops (boneless or bone-in)
  • All-purpose flour
  • Garlic powder
  • Oregano
  • Smoked paprika
  • Chili powder
  • Shallot
  • Garlic
  • White wine (optional)
  • Butter
  • Chicken stock
  • Heavy cream
  • Salt and pepper

How to make smothered pork chops

Follow these straightforward steps for a flavorful, comforting meal:

  • In a small bowl, combine garlic powder, oregano, smoked paprika, chili powder, salt and pepper. Reserve about one-quarter of the mixture.
  • Season the pork chops on both sides with three-quarters of the seasoning. Mix the remaining seasoning into the all-purpose flour.
  • Coat the pork chops evenly with the seasoned flour and shake off any excess.
  • Heat oil in a large skillet over medium-high heat. Fry the pork chops about 5 minutes per side until golden. Remove the chops and set aside.
  • Add the shallot and garlic to the skillet and cook briefly until fragrant, about 20–30 seconds.
  • Add 1 tablespoon of the seasoned flour and the butter, stirring to combine. Pour in the white wine and reduce it by half (about 1–2 minutes). If you prefer not to use wine, skip this step and proceed with stock.
  • Stir in the chicken stock and simmer until the sauce begins to thicken.
  • Whisk in the heavy cream, taste and adjust seasoning with salt and pepper as needed.
  • Return the pork chops to the skillet, reduce the heat to low, cover, and cook until the chops are fully cooked through (internal temperature 145°F is recommended). Spoon sauce over the chops before serving.

Why this smothered pork chops recipe is so good

  • A balanced blend of spices, butter, garlic and a splash of wine creates a deep, layered flavor in the sauce.
  • The method keeps the pork chops moist and tender while building a sauce that’s perfect for spooning over sides.
  • Simple, inexpensive ingredients make this an accessible weeknight favorite with great results.

Top Tip:

Cook pork chops to an internal temperature of 145°F (63°C) and allow them to rest a few minutes before serving for the best texture and juiciness.

Recipe Variations

  • Omit the wine and use additional chicken stock if you prefer.
  • Add sliced mushrooms and crispy bacon for extra depth and texture.

What to serve smothered pork chops with

This dish is excellent over creamy mashed potatoes, but it also pairs well with white rice, buttered noodles, or a cheesy mac and cheese. Roasted or steamed vegetables such as honey-roasted carrots or green beans round the meal out nicely.

How long will pork chops last?

Stored in an airtight container, cooked smothered pork chops will keep in the refrigerator for up to 3 days. In the freezer, they can be stored up to 1 month; thaw and reheat gently to preserve texture.
