What Makes This a Gourmet Grilled Cheese?
Gourmet grilled cheese takes the classic sandwich up a notch by combining upgraded ingredients and complementary textures. This version layers crispy bacon, creamy avocado, roasted red peppers and two melting cheeses on thick, hearty bread for a rich, multi-textured sandwich that still comes together quickly.

Ingredients You’ll Need
- Sourdough, Italian, or other thick-cut bread
- Provolone cheese
- Monterey Jack cheese
- Avocado
- Baby arugula
- Roasted red pepper
- Butter (for grilling)
- Bacon (optional, per sandwich)
Ingredient Notes
Bread Choice
Sourdough crisps beautifully while remaining sturdy enough to hold the fillings. Thick-cut white, artisan loaves, brioche or Texas toast all work well depending on how rich or rustic you want the sandwich to be.
Cheese Options
Choose cheeses that melt smoothly and add flavor. Sharp cheddar, mozzarella, gouda, provolone, Monterey Jack and gruyere are all excellent. Combining two cheeses creates extra creaminess and depth.
Avocado
Use ripe but slightly firm avocados so they stay creamy without turning mushy during cooking.
Roasted Red Peppers
Roasted red peppers contribute a subtle smoky sweetness that complements the bacon and cheese. Pat them dry on paper towels before adding so the bread stays crisp.

Please note: Small substitutions may change the final texture or flavor. Prep and ingredient swaps listed are suggested and may not produce identical results.
How to Make Gourmet Grilled Cheese
Step 1: Prepare the Ingredients
Cook bacon until crispy and slice the avocado. Pat roasted red peppers dry with paper towels so they don’t make the bread soggy.
Step 2: Butter the Bread
Spread softened butter evenly on the outside of each slice of bread for a golden, flavorful crust.
Step 3: Build the Sandwich
Assemble the sandwich with cheese on the bottom slice, then roasted red peppers, avocado, bacon (if using), arugula and another layer of cheese. Place the second slice of bread on top, butter side up. Putting cheese on both sides of the fillings helps everything bind together as it melts.
Step 4: Cook Low and Slow
Heat a skillet over medium-low. Place the sandwich butter side down and cook slowly so the bread turns golden and the cheese melts without burning. Flip carefully and cook the second side until equally crisp and the cheese is fully melted. Cover briefly if needed to help thicker cheese layers melt.
Step 5: Serve Hot
Remove from the pan, let rest 30–60 seconds, slice, and serve immediately while the cheese is hot and gooey.

Tips for the Best Gourmet Grilled Cheese
- Let the sandwich rest 30–60 seconds before slicing to avoid a cheese spill
- Cook over medium-low heat so cheese melts before the bread darkens
- Use freshly shredded cheese for smoother melting
- Cover the skillet briefly to help thicker cheese layers melt faster
- Avoid overfilling so the sandwich is easy to flip and holds together
Variations
Spicy Gourmet Grilled Cheese
Add sliced jalapeños or swap in pepper jack cheese for heat.
Turkey Bacon Version
Swap regular bacon for turkey bacon for a lighter option.
Tomato Addition
Fresh tomato slices pair beautifully with avocado and bacon—pat them dry first.
Extra Crispy Version
Sprinkle grated Parmesan in the skillet and let it crisp against the bread for a crunchy cheese crust.
What to Serve with Gourmet Grilled Cheese
This sandwich pairs nicely with classic sides such as tomato soup, potato soup, pasta salad, kettle chips, french fries, pickle spears, fresh fruit or a simple side salad. It also fits well with casual lunches and game-day menus.
Storage and Reheating
Serve this sandwich fresh for the best texture. Leftovers can be refrigerated for up to 2 days.
To reheat: warm gently in a skillet over low heat or use an air fryer for extra crispiness. Avoid the microwave if possible to prevent the bread from becoming soggy.
Sharp cheddar, gouda, mozzarella, Monterey Jack, provolone and gruyere all melt well and work nicely. Mixing two cheeses creates a creamier texture.
You can prep ingredients in advance, but cook the sandwich just before serving for the crispiest result.
Sourdough, artisan white, Italian, brioche and Texas toast all perform well because they hold up to fillings and crisp nicely.
