Make 10 Holiday Cookies from 1 Dough!

Welcome to the holiday baking season—the time for warm treats, sharing, and celebrating with homemade cookies. I love baking a variety so family and friends can enjoy them all week. In this post I explain how to turn one butter cookie dough into ten different festive cookies: gingerbread men, snowballs, piped cookies, cut-outs, icebox cookies, Linzer (jam) cookies, and three soft cookies (chocolate chip, double chocolate, and molasses).

Make the cookie dough

The base cookie dough

Prepare one batch of the base butter cookie dough (see the referenced base recipe). Divide the dough into portions to create three flavored variations: vanilla, gingerbread, and chocolate.

The dough will be soft at room temperature. If you plan to roll it right away, place it between parchment sheets to prevent sticking. Otherwise chill until firmer.

1. Vanilla cookie dough

Mix vanilla extract into a portion of the base dough. Chill as needed before shaping.

2. Gingerbread cookie dough

Add molasses, spices (ginger, cinnamon, allspice, clove), and a little all-purpose flour to a portion of the base dough. Mix until uniform, then chill.

3. Chocolate cookie dough

Stir cocoa powder into a portion of the base dough and mix until consistent. Chill if needed before shaping.

With the flavored doughs ready, it’s time to shape and bake ten different cookies.

Make 10 Holiday Cookies

Snowball cookies

Fold toasted pecans into vanilla dough, chill so you can roll into balls, then bake. Once cooled, roll in powdered sugar to finish.

Piped cookies

Pipe vanilla dough into rosettes or rounds using a star tip. Chill before baking. After baking, pipe melted dark chocolate into the center.

Wreath cookies

Roll vanilla dough between parchment and chill. Use two circular cutters to create a ring. Decorate with dried cranberries and sprinkles, chill again, and bake. Optionally thread a decorative string through each cookie once cooled.

To vanilla dough add brown sugar and baking soda, mix in mini chips. Chill, portion into 15 g balls, press flat, top with extra chips, and bake.

Mini gingerbread cookies (molasses cookies)

To gingerbread dough add brown sugar and baking soda, chill, roll into 15 g balls, coat in granulated sugar, then bake. Optionally dip or drizzle with white and dark chocolate for a marbled finish.

Roll gingerbread dough between parchment, chill, cut into shapes, use a toothpick to draw faces and add sprinkles for details. Chill again if needed, then bake.

Mini chocolate cookies

To chocolate dough add brown sugar, baking soda, and milk. Chill, shape 15 g balls, bake, and optionally dip in melted dark chocolate for a glossy finish.

Linzer cookies (Jam cookies)

Roll chocolate dough, chill, cut pairs of shapes (one with a center cutout). Bake, then pipe jam on the bottom cookie, dust powdered sugar on the top, and sandwich together.

Star cookies

Use the cut-out stars saved from the Linzer cookies. Brush with egg white, add sprinkles, chill briefly, and bake until lightly golden.

Dried fruits & nuts icebox cookies

Combine leftover dough with diced dried fruit and toasted nuts. Shape into a log, freeze, brush with egg white, roll in granulated sugar, chill, then slice and bake.

How to bake them

Chill cut-out and piped dough until just before baking. Cold dough spreads less and holds its shape better. Freezing briefly helps the best results.

Bake in a preheated oven at 345°F (174°C) for 6–15 minutes. Time depends on cookie size, thickness, and your oven.

  • Adjust time and temperature for your oven and cookie size.
  • For soft cookies: Shorter bake times keep them chewy—small cookies may only need 6–7 minutes. They firm up as they cool. Molasses cookies usually bake fastest; chocolate cookies may take longer. Remove batches as they finish and continue baking the rest if mixed on one tray.
  • For cut-outs and piped cookies: Bake until edges show a light golden caramelization for a crisp texture.
