There aren’t enough words to describe how delicious these Buttery Coconut Bars are. The combination of a buttery, slightly crisp crust with a rich, coconut-sprinkled filling is downright addictive. I had to share most of the pan with friends and coworkers because it was hard to stop eating them.
My husband tried one after work and immediately said they were amazing — he would have finished the whole pan if I hadn’t handed them out.
Within minutes of delivering samples to friends, I heard back from several people raving about how good they were. These bars are always a hit.

The base is a simple buttery crust made from brown sugar, melted butter and all-purpose flour. Press it into a pan and give it a short bake to set the crust. The filling is a luscious mix of eggs, sweetened condensed milk, a little flour and brown sugar, then plenty of coconut stirred in.
While the coconut provides great texture and flavor, the sweetened condensed milk is the real magic here — it makes the filling creamy and perfectly sweet without being cloying.
Once the filling is spread over the warm crust, top with more shredded coconut and return to the oven until the top is lightly golden.

Ingredients
CRUST:
- 2 cups all-purpose flour
- 1 cup packed brown sugar
- 1/2 teaspoon salt
- 1 cup butter, melted
FILLING:
- 3 large eggs
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/4 cup butter, melted
- 3 teaspoons vanilla extract
- 1/2 teaspoon salt
- 4 cups sweetened shredded coconut, divided
Instructions
Crust:
- Preheat oven to 350°F. Line a 13×9-inch baking pan with parchment paper, spraying only the sides lightly.
- In a large bowl, mix the flour, brown sugar and salt. Add the 1 cup melted butter and combine until well mixed.
- Press the mixture into the bottom of the prepared pan. Bake until light brown, about 15 minutes. Cool 10 minutes on a wire rack, then reduce oven temperature to 325°F.
Filling:
- In a large bowl, whisk together the eggs, sweetened condensed milk, flour, brown sugar, 1/4 cup melted butter, vanilla and salt until blended.
- Stir in 3 cups of the shredded coconut and spread the mixture over the warm crust. Sprinkle the remaining 1 cup of coconut on top. Bake until lightly golden, 25–30 minutes.
- Allow the bars to cool on a wire rack. Using the parchment paper edges, lift the bars from the pan and cut into squares once cooled.
