Summer is full of simple pleasures: running through sprinklers, reading outdoors, sticky popsicle fingers rinsed at the hose, a neighbor dropping off a fresh batch of pizzelle, or a boat slipping out of the marina. Picnics under an old oak, chasing fireflies, block parties at dusk, and impromptu gatherings with neighbors—these small moments make the season memorable.

These days my summer includes neighborhood block parties, outdoor family movie nights projected on a sheet, a warm fire pit with s’mores, sangria full of fruit, and watching my children bob in the pool. What little things bring you joy each summer?

One of our favorite sweet moments is making Nutella Berry Filled Waffle Cookies (Pizzelle). When the heat climbed and no one wanted the oven on, I remembered my neighbor Mrs. B and the crisp, delicate pizzelle she used to bring during summer. I shaped them warm and filled them with lightly whipped cream, fresh summer berries, and a smear of Nutella. They were an instant hit with the kids.

Nutella Berry Filled Waffle Cookies (Pizzelle)

Ingredients
For the Nutella Berry Filled Waffle Cookies (Pizzelle):
- 1 dozen waffle cookies pizzelle or waffle cones
- 1 cup assorted berries blueberries, raspberries, sliced strawberries
- whipped cream see below
- Nutella
- powdered sugar
For the Pizzelle (makes about 2 dozen)
- 3 large eggs well beaten
- 3/4 cup granulated sugar
- 3/4 cup unsalted butter melted
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 2 teaspoons vanilla
For Whipped Cream
- 1 cup heavy cream
- 1/4 cup granulated sugar
Instructions
For the Waffle Cookies/Pizzelle:
-
In a large bowl, add and beat the ingredients in the order listed, mixing well after each addition. Drop rounded spoonfuls of batter (about 2 tablespoons) onto the center of a preheated pizzelle maker. It may take a little practice to find the best spot for the batter so it spreads evenly when you close the lid. Cook until steaming stops, about 60 seconds. Remove the cookie with a fork and, while still warm, gently roll around a cylinder to shape. Place on a cooling rack to dry.
For the Whipped Cream:
-
Chill a mixing bowl and whisk attachment in the freezer. Whip the heavy cream with the sugar until stiff peaks form. Store covered in the refrigerator until ready to assemble.
Assemble the Nutella Berry Filled Waffle Cookies (Pizzelle):
-
Fill a piping bag with whipped cream and another with Nutella, or use small spoons. Insert a few berries into each rolled cookie or waffle cone, then pipe or spoon in whipped cream and add a dollop of Nutella. Garnish with a few extra berries and dust with powdered sugar before serving. For best crunch, serve immediately.
