Description

This White Chocolate Chia Pudding tastes like dessert but works as a healthy snack or breakfast. It’s gluten-free, dairy-free, Paleo-friendly, and very simple to prepare.


Ingredients

  • 14 ounces unsweetened carton coconut milk
  • 2 tbsp raw cashew butter
  • 17 discs cocoa butter
  • 1/4 cup collagen peptides
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 6 tbsp chia seeds

Instructions

  1. Place all ingredients except the chia seeds into a high-speed blender. Blend on high until completely smooth.
  2. Divide the mixture evenly into three 8-oz mason jars. Add 2 tablespoons of chia seeds to each jar, seal, and shake each jar well. Refrigerate overnight. Shake again about 45 minutes after refrigerating to prevent the chia seeds from settling.
  3. When ready to eat, transfer the pudding to a bowl or enjoy directly from the jar. Add desired toppings and serve.
