In our house we have a few food traditions. Each child chooses a favorite treat for their birthday, and year after year this rainbow chip fudge—affectionately called “birthday fudge” by my boys—tops their list. Because it’s so fast and forgiving, I’m happy to make it for them every year.

What is rainbow chip fudge?

This fudge is a true two-ingredient recipe if you don’t count the optional sprinkle of extra rainbow chips on top. It’s not the same as traditional, cooked-from-scratch fudge—think of it as a clever, no-fuss fudge made from melted white chocolate and a jar of rainbow chip frosting.

Rainbow chip frosting is a vanilla frosting that already contains tiny colorful candy chips. When combined with melted white chocolate, it forms a creamy, colorful fudge. Because the recipe relies on frosting and chocolate rather than a cooked sugar base, the finished fudge will soften if left at room temperature. If it becomes too soft, simply chill it in the refrigerator until it firms up again.

Ingredients

For this recipe you only need:

  • White chocolate baking chips or wafers (12 oz bag)
  • One jar of rainbow chip frosting
  • Extra rainbow chips for garnish (optional)

How to make rainbow chip fudge

1. Grease an 8×8-inch baking dish with non-stick cooking spray (or line it with parchment for easier removal). Set aside.

2. Place the white chocolate baking chips in a microwave-safe bowl. Heat on medium power in 30-second intervals, stirring between each, until the chocolate is almost fully melted. If a few small lumps remain, stop microwaving—the residual heat and stirring will smooth them out. Overheating will burn the chocolate, so be cautious.

3. Remove the lid and inner foil seal from the frosting jar. Microwave the frosting for about 20 seconds, then stir to ensure it’s soft and pourable.

4. Pour the warmed frosting into the melted white chocolate and gently stir until the mixture is evenly combined and smooth.

5. Transfer the chocolate-frosting mixture to the prepared baking dish and spread it evenly with a spatula. Sprinkle additional rainbow chips over the top if desired.

6. Refrigerate the dish for at least one hour, until the fudge is set and firm.

7. Use a sharp knife to cut the fudge into bite-sized squares and serve chilled.

Storage

Store the fudge in an airtight container. At room temperature it will soften; keep it refrigerated if you prefer firm pieces. If it softens, place it back in the fridge for a short time before serving.

Ingredients

Instructions

  • Grease an 8×8″ baking dish with non stick cooking spray.
  • Add the chocolate chips to a microwave safe bowl. Heat them on medium heat at 30 second intervals, whisking in between each one, just until the chocolate is melted. If it’s mostly melted except for a few lumps- do not microwave it again- they will smooth out with additional whisking.
