- 192 grams granulated monkfruit sweetener or other granulated sweetener (about 1 cup) adjust to taste
- 1 tsp vanilla extract (optional)
- 264 grams peanut butter (about 1 cup) nut-free option: use seed butter or coconut butter with peanut flavoring
- 1 large egg, room temperature
- 2 TBS cocoa powder optional — for chocolate version

Preheat the oven to 350°F (175°C). Line a large baking sheet with parchment paper and set aside.

In a large bowl, combine the sweetener, peanut butter, egg, and vanilla (if using). Stir until the mixture forms a smooth, uniform dough. If making the chocolate version, add the cocoa powder and mix until incorporated.
