Ingredients

Salad

  • baby spring mix
  • 12 slices vine ripe tomato
  • 6 squares watermelon 1/2″ thick, 4×4 squares
  • 1/3 cup queso fresco crumbled
  • 1/3 cup sweet onion sliced
  • salt and pepper to taste

Jalapeno Vinaigrette

  • 2 jalapeños seeded and minced
  • 3 tbsp green onion thinly sliced
  • 2 tbsp cilantro chopped
  • 1 tsp agave nectar
  • 2 cloves garlic minced
  • 1/4 cup lime juice freshly squeezed
  • 3/4 cup extra virgin olive oil
  • salt and pepper to taste

Instructions

Jalapeno Vinaigrette

  • Whisk together jalapeños, green onions, cilantro, agave nectar, garlic, and lime juice. Slowly drizzle in the olive oil while whisking until emulsified. Season with salt and pepper to taste.

Salad

  • Cut the watermelon into 4×4 squares about 1/2 inch thick. Slice the tomatoes into even rounds.
  • In a medium bowl, toss the baby spring mix with the jalapeño vinaigrette and season lightly with salt.
  • To assemble each serving, place one watermelon square on a plate. Top with a portion of the dressed spring mix, then add tomato slices, crumbled queso fresco, and sweet onion. Drizzle additional dressing over the top if desired and finish with salt and pepper to taste.
