Ingredients

  • 1 lb ground beef
  • 9 oz elbow pasta
  • 1 can Rotel (10 oz)
  • 3 tbsp taco seasoning
  • 1 cup water
  • 1 cup shredded sharp cheddar cheese

Instructions

  • Preheat the oven to 400°F (200°C).
  • Cook the pasta according to package directions, then drain and set aside.
  • In a large skillet, brown the ground beef and drain any excess grease. Add the taco seasoning, water, cooked pasta, and Rotel. Stir to combine and simmer for about 5 minutes so the flavors meld.
  • Grease a 9×13-inch baking dish. Transfer the beef and pasta mixture to the dish and spread it evenly. Sprinkle the shredded cheddar over the top.
  • Bake for 15–20 minutes, or until the cheese is melted and bubbly. Serve with optional toppings such as sour cream, diced tomatoes, salsa, and guacamole.
