
Spinach artichoke dip is a universal favorite, and I turned that beloved appetizer into a satisfying main course by lightening it up and adding chicken. This spinach artichoke chicken pasta delivers the familiar creamy flavor you love while boosting the dish with plenty of spinach and tender shredded chicken.

The recipe is flexible: if you need a gluten-free option, swap rice for the pasta or simply serve the spinach-artichoke-chicken mixture on its own. It’s creamy, flavorful, and packed with 12 ounces of spinach, so it feels a little more nutritious than a typical indulgent pasta.

I’m always looking for ways to add more greens to my kids’ meals, and spinach sneaks in easily — in smoothies, scrambled eggs, quesadillas, or sauces. Sometimes I finely grate zucchini or carrots and fold those in as well. My kids aren’t particularly picky, but any dish that hides extra vegetables is a win. - 16 oz. pasta of choice (penne works well)
- 3 tbsp olive oil
- 1/2 yellow onion, diced
- 12 oz frozen chopped spinach, thawed and well drained
- 14 oz artichoke hearts, drained and chopped
- 1/2 tsp poultry seasoning
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/2 tsp garlic powder
- 2 cups cooked, shredded chicken
- 3/4 cup plain Greek yogurt
- 1/2 cup finely grated Parmesan cheese
- Bring a large pot of salted water to a boil and cook the pasta according to package directions. Drain and set aside.
- In a large frying pan, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3–5 minutes.
- Add the drained spinach, chopped artichoke hearts, poultry seasoning, salt, pepper, garlic powder, cooked shredded chicken, and Greek yogurt. Stir to combine and cook until the mixture is heated through and bubbling.
- Stir in the grated Parmesan until melted and well incorporated.
- Either toss the spinach-artichoke-chicken mixture with the cooked pasta or serve it spooned over the pasta.
- Serve warm and enjoy.
