Instructions

Make the tarragon butter: In a small pot, melt the butter over low heat. Stir in finely minced tarragon and kosher salt to taste. Remove from heat and add the juice of one lemon, then set the butter aside.

Toss the lobster: Place the cooked lobster meat in the warmed tarragon butter and toss gently until the lobster is warmed through, about a couple of minutes. Remove from heat and add the chopped bread-and-butter pickles, finely chopped celery, and minced chives. Stir in the mayonnaise and mix until everything is evenly combined. Ingredients

  • 1 pound lobster meat, cooked, shelled and cubed
  • 10 bread and butter pickles, finely chopped
  • 2 sticks celery, finely chopped
  • 1 tablespoon fresh finely chopped chives
  • 1/4 cup mayo
  • kosher salt and black pepper to taste
  • 4 to 5 split-top hot dog buns
  • top with fresh chives

Instructions
