Step 1: How to spatchcock a chicken.

Seasoned Spatchock Chicken

Spatchcocking (butterflying) the chicken helps it cook evenly and more quickly. Using kitchen shears or a sharp knife, remove the backbone. Press firmly on the breastbone to flatten the bird so it lays evenly. Pat the chicken dry, then coat the outside generously with Dad’s All Purpose rub. Chill in the refrigerator for about 30 minutes while you prepare the sauce.

Step 2: Let’s get saucy.

White Alabama Sauce

The White Alabama sauce is the star here—tangy, creamy, and with a gentle kick that appeals to all ages. It elevates a simple chicken into something memorable.

In a bowl, combine mayo, apple cider vinegar, Dijon mustard, hot sauce, Dad’s All Purpose rub, brown sugar, prepared horseradish, and honey or agave. Whisk until smooth and refrigerate while the chicken cooks.

Step 3: How to grill the perfect Chicken.

Grilled spatchcock chicken

Preheat the grill to 375°F and set up for indirect heat. Place the spatchcocked chicken skin-side up and cook until the breast reaches an internal temperature of 160°F, which typically takes about 45 minutes depending on the size. Remove the chicken and let it rest 10–15 minutes; this allows juices to redistribute and brings the final temperature to about 165°F.

Before serving, dunk or brush the meat side of the chicken with the White Alabama sauce and enjoy.

Frequently Asked Questions:
