This lighter chocolate pudding uses low- or no-fat milk and reduced sugar, yet still turns out thick and creamy — just like a pudding made with cream. The result is a delicious, lower-calorie treat that’s easy to enjoy guilt-free.

One of my favorite parts of these parfaits is how easy they are to dress up. A dollop of homemade whipped cream, a few crushed chocolate cookies or a sprinkle of chopped candy adds texture and personality. If you’re craving something even more indulgent, try layering this pudding with fruit or brownies for extra flavor and contrast.

The pudding needs a good bit of stirring on the stove, so give little helpers a safe task like crushing cookies or spooning layers into glasses.

With a lighter chocolate pudding you can afford to make a parfait out of it!

Ingredients

  • 3 cups 1% milk (or skim)
  • 2 1/2 tablespoons sugar
  • 2 tablespoons cornstarch
  • 2/3 cup dark chocolate chips (about 60% cacao)
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 3 tablespoons powdered sugar
  • (Optional) Oreos or other cookies

Instructions

  1. In a pot over medium heat, combine the milk, sugar, and cornstarch. Whisk constantly until the mixture begins to thicken, about 15 minutes.
  2. While the milk mixture cooks, melt the chocolate chips in a microwave-safe bowl in 20-second bursts, stirring between intervals until smooth. Set aside.
  3. Temper the egg yolk by slowly whisking a small amount of the hot milk into the yolk to warm it without scrambling. Then whisk the tempered yolk back into the pot with the milk mixture.
  4. Stir in the melted chocolate and vanilla. Simmer on low, whisking, for another 15–20 minutes until thickened.
  5. Pour the pudding into a medium bowl and cover with plastic wrap pressed directly onto the surface to prevent a skin. Chill in the refrigerator for at least 2 hours.
  6. When ready to assemble, beat the heavy cream with the powdered sugar on high until soft peaks form. Take care not to overbeat.
  7. Layer the chilled pudding and whipped cream in serving glasses. Add crushed cookies, fruit, or candy between layers if desired. Serve cold.

Notes

Feel free to add other candies, chopped chocolate, or fruit as layers. This recipe makes enough for two very large parfaits or four smaller ones.
